Broccoli Pesto with Sgaia “fakin” Bacon and Peas by Michelle - 23rd June 2016 Ingredients 1 head of broccoli 4 garlic cloves 1/2 cup of chilli rapeseed oil (we used Mr Hugh’s) 1 lemon 2 cups of fresh basil leaves (we used African Blue basil from our own garden, smells amazing!) Pink salt, Ground pepper (to taste) 1/2 bag of orzo pasta 1 cup of frozen peas 4 rashers of vegan bacon (we worship Sgaia) Simple Steps Prepare the broccoli by peeling leaves off and cutting into small florets. Also prepare the garlic by removing the skins but leave bulbs whole Steam the broccoli and garlic for 10-15 minutes until medium-soft Remove from stove and leave to cool for 5 minutes (these little guys work wonders when you’re in a small kitchen) Pour the chilli oil into a blender, then add the broccoli, garlic, basil leaves and half of the lemon (squeezed, no pips!) Blend on high for 2 minutes. Stop. Scrape down the sides and add salt & pepper. Blend again on high for 2 minutes. Boil a big pot of water and cook the orzo per the packet’s instructions (5-7 mins), cook the peas at the same time in the water with the orzo Grill 4 rashers of vegan bacon (we used Sgaia bacon which I’m in LOVE with), remove and cool for a few mins before cutting into chunks Drain orzo/peas, rinse under cold water and put back into the same pot Mix in the vegan broccoli pesto and heat over a medium heat, stirring all the time. Squeeze in the remaining half a lemon and season further with salt and pepper (only if it needs it, easy on the salt tiger!)
